I replaced the stock street tire of the 1958 with the same diameter but slightly thicker 265/65/18 Toyo Open Country AT3s.

I know these are three-peak snow rated, but am wondering if these are good enough as a dedicated snow tire and if I will need tire chains for trips up the mountain during winter.

Those are supposed to be good in the snow. For occasional visits, probably fine. If it were a daily thing that you were driving on snow and ice, snow tires are better. But with the full time 4WD those will be pretty good.

I like them. They do great very planted and firm feeling on snow.
