During regular city driving, my oil pressure gauge consistently shows around 75% (three out of four bars white), which is higher than the expected 50%. Is this normal ?

Typically oil pressure increases with engine speed on engines that use a conventional mechanical oil pump driven off the crank snout or by a belt or chain.

Stop and go traffic means variations in engine speed.

Totally normal. Oil pressure can be high and not hurt anything. Low oil pressure is a sign of things going very very badly.
