I've got the same mindset- slightly larger tire for a bit more ground clearance without a big hit to fuel efficiency. Hardest I will push this rig is to access trailheads in CO to climb 13ers and 14ers, so SL 275/70 tire should suffice.
Nitto Terra Grappler G3 are SL in 275/70/18; I'm thinking about these once the stock Michelin tires need to be replaced, but like you want to minimize impact of tires on reducing fuel efficiency. I think the tire is only about 6-7 lbs heavier than the Michelin if I recall (37 vs 43 lbs?)- so...

Had a 2006 Subaru Outback with manual transmission- loved that car. I waffled on getting an Outback Wilderness or going for a 4WD vehicle. Poor gas mileage and on-road manners kept me away from 4WD vehicles, but when the new LC came out, and I test drove one, it checked all the boxes (except $$$).
My rig does the same- somewhat high pitch whistling noise when HVAC system is directed 100% to footwell space- much quieter when routed through all other venting options.
