Trouble finding any forged 17x8.5 wheel with +20 to +40 offset.

Even Method seems to have no wheel to use. I just can't find any lightweight wheel in stock that I want.

What else should I be looking at?
 
8 inch should work too. You are looking at a time when the first production run has been sold out. Many/most of the wheels for fit were sold out a month ago. Clearly either demand was underestimated, or the sellers' manufacturers are very busy.

Black Rhino. Have them on my jeep and they are awesome. They will be on my LC when I get it.

 
Have you looked at some of the Japanese brands? Volk, Rays, Work etc?

As the new 4Runners and Tacomas gain popularity, there will be more wheel options that fit properly.
 
Method 316 largest offset is in Matte Black finish with a +25mm offset. You're going to have some poke unless you go with the 255/80/17 tire.

I was thinking KO3s 275 70 17
Depends on if you want poke or not...

For no poke, 255/80/17, but those are only available in heavy E load rated tires.

For a bit of poke those KO3s are nice. Heavy for my taste but nice.
