I purchased my LC a few days ago. Obviously there is a learning curve to all the electronics but I feel exceptionally stupid. Can someone tell me how and the simplest way to reset the trip odometer?

This is the only way I found out how to do it. Annoying how they got rid of the dedicated button to reset things.

You are not alone.. Welcome to the asylum.
 
You can also do it from the settings on the center display

The center display "Update" button will reset your "Total Average" fuel economy, not the trip odometer. I have been hitting that update button on gas refills to simulate "tank average" MPG. I wish it included the distance as well though in the history.
