Just completed a road trip from SF Bay Area -> Mt St Helens and back and averaged 22.0 mpg for the trip (sticking to 5-10 mph over speed limit, mostly using cruise).

Not a sighting, but as I parked and walked into a building at lunchtime today, a woman standing outside the entrance said "I'm in love with your car" :-)

Sorry for an ignorant question, but I've never had a vehicle with a built-in tow hitch before... Just got a fun logo'ed tow hitch insert to put in when I'm not towing, but the locking pin it came with is too short to fit through all the way through the hole in the LC hitch. Any idea what...

I gotta admit I think the stock knob is... fine? I don't see any need to swap it out. What am I missing?

Just did a trip from SF Bay Area to Yosemite (Tuolumne Meadows) and back (~500 miles) with 3 people plus gear, averaged 23.3 mpg using mostly Normal driving mode. Kept mostly to speed limits or 5-10 over, tops. I'm reasonably satisfied since that's sea level -> 8200' and back.

The narrowmouth 1/2-liter Nalgene fits (snugly) into the cupholders just fine. (And is an awesome everyday waterbottle too, but it can be little hard to find.) EDIT: Amazon link for the curious Amazon.com, and I originally called it a 1-liter, it's actually the half-liter

What does the manual claim that Sport mode does?

It's the worst vehicle manual I've ever encountered. I've always reads my car manuals before, but this one is impenetrable and nearly useless.

I tried ECO mode for a while but didn't notice any meaningful difference in power or fuel economy -- I did notice a big (negative) difference in A/C performance though, enough to make me give up on it and just use Normal. Haven't really tried Sport yet. What's the mileage hit?

Try checking with Damian Lillard Toyota near Portland -- I bought my LCLC there for MSRP and they were an absolute class act, the best new-car-buying experience I've ever had (they didn't try to hard-sell anything and were more than willing to take no for an answer).
