With my FJ's I always specifically ask and print out the rotation pattern. With the land cruiser, putting the spare in the trunk might be a good addition.
What offset on the Method wheels? Icon did a video suggesting a 40 offset will fit 285's better than the stock offset. But that 25 or less risks running into the fender under flex.

That’s really helpful. If you go to a 40mm offset wheel a 285/70R18 fits fine (except for in the spare location). If you push to 25mm offset, you’ll have problems.
On Toyota's Land Cruiser build page, the picture for the dash cam shows what kind of windshield it was designed for: much closer to horizontal than the Land Cruiser's nearly vertical windshield!

Now you just need to convince someone to make some skinny options for an 18” wheel. The stock size is about the most skinny tire you can get without going to a smaller diameter tire.
Just went back and looked at the table and yeah I was really conservative/cautious in what I put in the table initially before people had Land Cruisers to start trying tires on. I just updated it since I've now seen many reports that 275/70R18's fit and don't rub and no reports of problems.
Someone just posted photos of 18" Methods with 18mm offset. It was less poke than I expected but still it was out past the mud flaps. I'm really hoping if enough people ask, Method will make some 18" bead grips with more LC appropriate offsets like they have in the 17" wheels. The 17" wheels...
I should add: at the SEMA event for vendors to measure the LC and GX, a Toyota/Lexus person said these are designed for 33” (slightly larger than stock) and larger tires with no or minimal modifications. I don’t think slightly upsized tires will be an issue.
I guess I’m assuming Toyota wouldn’t make wheels that would cause problems for their vehicles — those or anything with similar offsets shouldn’t be a problem. Zero offset might not be great, and spacers so the tires poke way way out nearly guarantee problems.
